Chef Masterclasses

Overview

Whether you are pursuing a career in catering, or just looking to add an edge to your skills set, our Masterclasses are ideal. Learn to whip up soup and sauces like a professional, prepare and cook fish, poultry and meat and even make show stopping desserts. We offer the following Masterclasses.

Soups & Sauces

Learn how to make classic soups and sauces working with different types of stocks which are essential to add real depth and flavour. You will learn how to make stocks from meat, fish and vegetables and how to use these to make delicious soups and sauces.

Fish & Shellfish

Learn the differences between a variety of flat, round and oily fish, including plaice and seabass. Discover how to prepare shellfish such as scallops and mussels, fillet fish and cook delicious fish dishes.

Poultry

Discover how to check quality points, how to debone a chicken and what can be made from the various poultry cuts. Learn how to create both traditional and modern poultry dishes.

Meat

Learn about the location of different cuts of meat and how to store, cook and serve meat. We will teach you step by step how to bloom and rest meat and how to cook the perfect steak like a professional.

Desserts

Learn the preparation processes, methods and presentation of hot and cold desserts. Often a section not explored by many chefs, these Masterclasses will teach you how to create delicious cold and hot desserts such as panna cotta, crème brûlée and eclairs.

Duration

Each Masterclass will run for 1 day. The next Masterclass is 'Soups & Sauces' and will run on Monday 10th February 2025.

Cost

£100 including VAT. (Group bookings available for up to 8 people - price on application).

Venue

NLTG’s Vocational Centre of Excellence in Accrington or other venues across the North West. Numbers permitting, this course can be delivered on company premises.
