Allergen Awareness & Control OverviewIt is essential for anyone who handles, prepares or serves food to have an awareness of food allergens and how they can affect the safety of customers. This course is designed to provide knowledge and understanding of food allergens and foods commonly causing intolerances, including their characteristics and effects. It also looks at the importance of effectively communicating information regarding allergenic ingredients to customers, and how staff can minimise the risk of cross-contamination from allergenic ingredients. Content The characteristics and consequences of food allergies and tolerances. Procedures for identifying and controlling contamination from allergenic ingredients. Procedures for the accurate communication of allergen information to customers. AssessmentMultiple choice exam. Duration1/2 day. The next course will run on Monday 13th January 2025 from 10am to 2pm.
